Cooking with Grace Baja from "The Spoiled Mummy"

Homemade Spaghetti Bolognese

"I usually tweak this (by adding as much vegetables as I can) to make it healthier than the usual versions found in restaurants or elsewhere. What I like about our recipe is that it is quite simple and easy to follow -- which means even kids can do this, as long as mum is there to supervise them of course!"

  • canola oil

  • 500g lean ground beef

  • 1 onion, diced

  • 2 tbsp minced garlic

  • 2 tbsp tomato paste

  • 1 jar ready-made pasta sauce or 1 can tomato sauce

  • 500g diced tomatoes

  • 1.5 cups sliced mushrooms

  • 2 pcs zucchini grated

  • 2 pcs carrot, cubed

  • 2 cups cherry tomatoes, halve

  • Parsley, chopped

  • Basil, chopped

  • Parmesan cheese (grated or shaved)

  • Wholewheat Pasta

  • Salt and Pepper to taste

Method

  1. In a frying pan, spray a light coating of canola oil and sauté garlic and onions.

  2. Fry ground beef until brown.

  3. Add tomato paste and stir well.

  4. Add pasta sauce (or tomato sauce, whichever you have) and then the veggies : carrots, mushrooms, zucchini.

  5. Cover and simmer for about 15-20 minutes.

  6. Add the cherry tomatoes last and sprinkle some fresh parsley and basil on top.

  7. Scoop the Bolognese sauce on cooked wholewheat pasta and serve with a lot of parmesan cheese!
